Under the Food Safety Act 1990, businesses that fail to comply with food safety regulations face unlimited fines, custodial sentences and permanent closure. Every food handler in your team is a legal liability, or a legal safeguard. The difference is training.
Level 1 is suitable for all food handlers as a basic introduction. Level 2 is the legal minimum for anyone working with food in a catering environment, including chefs and kitchen staff. Level 3 is required for managers and supervisors who oversee food safety in the business. Level 4 is for senior management and HACCP team leaders.

Under the Food Safety Act 1990 and the Food Safety and Hygiene (England) Regulations 2013, food business operators must ensure all food handlers are supervised, instructed and trained in food hygiene matters commensurate with their work.
