How do I use the allergen matrix chart?
Fill in each dish or product name in the left column. Tick the allergen boxes for each ingredient, including sauces, stocks, oils and garnishes. Use "C" to mark possible cross-contact. Update it whenever a recipe changes or you switch suppliers.
What are the 14 regulated allergens?
Celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, tree nuts, peanuts, sesame, soya, and sulphur dioxide and sulphites. The chart includes all 14 plus a column for cross-contact risks.
Can I wipe the chart clean to reuse it?
Yes, the 250-micron gloss laminated surface is wipe-clean. Use a dry-wipe marker to update entries, then wipe clean with a damp cloth when you need to refresh the information.
