Is HACCP training a legal requirement in the UK?

A documented HACCP plan is a legal requirement for any UK food business under Retained Regulation (EC) No 852/2004. The training itself is not statutory but EHOs expect every business to evidence that staff with responsibility for the HACCP system are trained to an appropriate level. Level 2 is the standard for food handlers; Level 3 for supervisors and managers; Level 4 for technical and quality leads.

Whats the difference between Level 2 and Level 3 HACCP?

Level 2 (Understanding HACCP) is aimed at line staff and food handlers. It covers the principles, hazards, and CCPs so that staff can work within a HACCP plan. Level 3 (Implementing HACCP) is aimed at supervisors and managers who are responsible for setting up, monitoring and reviewing the HACCP plan, including verification and corrective action procedures.

How long does HACCP certification take?

Level 2 Understanding HACCP is a 1-day course (around 6 guided learning hours). Level 3 Implementing HACCP is typically 2 days (around 12 guided learning hours). Both finish with a multiple-choice assessment supplied by RSPH.

Is HACCP training the same as food safety training?

No — they overlap but are distinct. Food safety training covers the practical day-to-day food handling rules (hazards, allergens, temperature control, cleaning, personal hygiene). HACCP training covers the systematic management framework that identifies and controls hazards at critical points in your process. Most UK food businesses need both: Level 2 Food Safety for handlers, and Level 2 HACCP for anyone working within a HACCP plan.
