Why must raw food go at the bottom?
Raw poultry, meat and fish can drip and cross-contaminate ready-to-eat food stored above them. Keeping raw at the bottom is the easiest way to prevent this (Regulation (EC) 852/2004).
What temperature must the fridge be?
The fridge must be 5°C or below (legal maximum 8°C in England, Wales and Northern Ireland). Check it regularly with a probe thermometer.
How do I label and date food?
Label everything with the date opened or made, and the date it should be used by. First in, first out means using older stock before newer stock.
