What temperatures must I cook food to?
Cook food to a core temperature of 75°C instantly, or 70°C for 2 minutes (or other time and temperature combinations per FSA guidance). Reheat to 75°C (82°C in Scotland), and reheat only once.
How cold must fridges and freezers be?
Fridges must be 5°C or below (legal maximum 8°C in England, Wales and Northern Ireland). Freezers must be −18°C or below. Check regularly with a probe thermometer.
How long can food stay out of the fridge?
Chilled food can be out of the fridge up to 4 hours, once. Hot food can be below 63°C for up to 2 hours, once. After that, use or throw it away.
